1 cup brown sugar
1/2 cup shortening
1 tablespoon grated lemon peel
1 egg
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/4 teaspoon ginger
Sugar

Directions:
Directions:
Heat oven to 350.

Mix brown sugar, shortening, lemon peel and egg in bowl. Stir in flour, baking soda, cream of tartar, salt and ginger.

Shape dough into 1 inch balls. Dip tops in sugar. Place balls, sugar side up, 3 inches apart on ungreased cookie sheet.

Bake 10-11 minutes or until almost no indentation remains when touched.
