3 tablespoons orange juice
1 small onion, chopped
2 cups cooked brown rice
3 tablespoons ginger
2 teaspoons parsley
4 boneless, skinless chicken breasts
1/4 teaspoon cinnamon

Directions:
Directions:
Heat oven to 350.

Grease square 8 x 8 x 2 baking dish.

Heat 1 tablespoon orange juice to boiling in 2 quartsaucepan. Cook onion in orange juice stirring frequently. Stir in rice, ginger, parsley and 1 tablespoon orange juice.

Spoon rice mixture into baking dish. Place chicken on rice; brush with remaining 1 tablespoon orange juice. Sprinkle with cinnamon.

Cover and bake 30 minutes. Uncover and bake 20 minutes longer.
