1/4 cup butter
1 egg
2 tablespoons water
2 1/2 - 3 lb chicken; cut up
1 cup mashed potato flakes
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
Directions:
In 13 x 9 pan, melt butter.

In small bowl, combine egg with water; beat slightly.
Place potato flakes in a pie pan. Dip chicken pieces in egg mixture; then roll in potato flakes to coat well.

Arrange in single layer in pan, rolling in butter to coat. Sprinkle with salt and pepper.

Bake uncovered at 400 for one hour, turning once.
