1 turkey carcass
1 lb carrots, sliced
4 cloves garlic, minced
2 onion chopped
1 tablespoon salt
2 teaspoons pepper
10 quarts water
1 cup barley

Directions:
Directions:
Place turkey, carrots, onion, garlic, salt, pepper, and water in large pot over medium heat. Bring to boil; reduce heat and simmer for 3 hours.

Skim foam as soup cooks.

Cool and shred meat off bones. Return meat to soup; add barley. Simmer for 40 minutes.
