1 lb. Ground Beef, browned
1-1/2 C. Sharp Cheddar Cheese, shredded; divided
1/2 C. Onion, chopped, optional
1/2 can condensed Cream of Mushroom soup
1/2 can condensed Cream of Tomato soup
1 can Hot Enchilada Sauce
Vegetable oil
12 Corn Tortillas

Directions:
Directions:
Combine beef with 1/2 C. cheese and onion; set aside. Combine soups with enchilada sauce. Dip tortillas in hot oil to soften, a few seconds on each side. Top each tortilla with one heaping Tbsp. of meat mixture and roll up. Place seam side down in a 9x13 baking dish. Pour sauce over rolled tortillas and top with remaining 1 C. cheese. Bake at 350 for 25-30 minutes.
