16 oz. pkg. dried Green Split Peas
8 C. Water
Smoked Pork Hock or Ham Bone
1 large Onion, diced
3 large Carrots, peeled and chopped
2 Potatoes, peeled and chopped
1/4 tsp. ground Thyme
1 Bay Leaf
1/4 tsp. ground Black Pepper

Directions:
Directions:
Wash and sort peas. Place peas in large pot and cover with 2-inches of water, bring to a boil. Cover and reduce heat, simmer slowly for 20-30 minutes, stirring occasionally. Add remaining ingredients (except salt and pepper) to pot and bring to a boil, then reduce heat and simmer for one hour, stirring occasionally. Add salt and pepper to taste during the last 5 minutes of cooking. If soup is too thin, thicken with flour mixed in a small amount of milk or water, and stir in 1 Tbsp. at a time until desired consistency.
