3 tbsps. olive oil
2 lbs. beef, cubed
1 tsp. salt
Pepper
3 garlic cloves, minced
3 leekds, sliced
1 lb. mushrooms
7 carrots, sliced
3 potatoes, peeled
1/2 cup frozen peas
1 can beef broth
1 cup red wine
1/4 cup water
1 tsp. cumin
1/8 tsp. cayenne pepper

Heat 2 tbsps. olive oil in oven proof pot over medium heat. Season beef with salt and pepper and brown. Remove from pan. Heat 1 tbsp. oil and add garlic, leeks and mushrooms. Cook 5 minutes. Add beef and remaining ingredients. Bring to a boil. Bake covered at 350 degrees for 30 minutes. Remove lid, bake additional 30 minutes. Stir in frozen peas and cook 15 minutes more.
