1/4 cup flour
1 tablespoon curry powder
1/4 teaspoon salt
1 3/4 cups water
1 lb boneless skinless chicken breast, cut into bite-sized pieces
1 small onion, cut into thin wedges
1/2 lb small red potatoes, cut into 1/2 inch pieces.
1 tablespoon chicken bouillon
1 package frozen peas & carrots
1/2 cup half-and-half

Directions:
Directions:
In small bowl, combine flour, curry powder, salt and 1/4 cup water; beat with wire whisk until smooth; set aside.

Spray large saucepan with cooking spray. Heat over medium high heat. Add chicken and onion; cook 3-4 minutes, stirring occasionally.

Add potatoes, bouillon and remaining 1 1/2 cups water. Bring to boil. Reduce heat; cover and simmer 8 minutes.

Add vegetables. Return to a boil. Reduce heat; cover and simmer 4-6 minutes.

Stir flour mixture; gradually add to stew, stirring constantly until blended. Bring to boil, stirring constantly. Boil and stir one minute. Reduce heat to low. Stir in half-and-half. Cook until well heated.

Salt and pepper to taste.
