4 boneless skinless chicken breasts, cut into 1 inch pieces
1 tablespoon oil
2 cloves garlic, minced
1/2 cup chopped onion
3/4 cup mushrooms
1 cup frozen peas/carrots
1 tablespoons parsley
1/4 teaspoon ginger
salt & pepper to taste
5 cups cooked rice
2 eggs, scrambled
1/2 cup soy sauce

Directions:
Directions:
In skillet, brown chicken in oil. Stir-fry garlic, peas & carrots, and onion. Add mushrooms; cook until all vegetables are tender. Add parsley, ginger, salt, pepper, rice and eggs; stir until well mixed.

Add soy sauce and heat through.
