3 1/2 pounds pot roast
2 sliced onions
6 crushed garlic cloves
2 chopped green peppers
1 cup tomato sauce
2 chopped ripe tomatoes
2 bay leaves
1 teaspoon salt (or more to taste)
1/4 cup extra virgin olive oil (or less)
1 cup water (or more)

1 whole lemon for marinating

Directions:
Directions:
Marinate meat overnight with salt and lemon. The following day, brown meat on both sides in olive oil. Add 1 cup water. Cover and simmer 2 hours (add more water as liquid evaporates). Shred meat after it's cooled. Sauté onions, green peppers until caramelized. Add garlic and sauté 30 seconds. Add all remaining ingredients, along with shredded meat and the juices left in pan. Cover and simmer on low 20 minutes.
