1 c bulgur (cracked wheat)
1 c boiling water
1/2 c olive oil
1/3 c lemon juice
1 c finely chopped onions
2 c finely chopped fresh parsley
4 tomatoes, diced
1 t salt
fresh ground pepper to taste

Directions:
Directions:
Pour boiling water over wheat. Let cool. Add rest of ingredients. Refrigerate at least 3 hours before serving.
