Ingredients: 2 pounds small white skinned potatoes 4 slices bacon, chopped 1 medium red onion, diced 1/2 can chicken broth 1/2 cup white vinegar 3/4 cup chopped fresh chives

Directions: |
Directions:Cook the potatoes in boiling, salted water till tender, about 30 minutes. Drain and cool 15 minutes. Peel while still warm ann cut into 1/3 " slices. Transfer to a medium bowl. Meanwhile, cook bacon in skillet till beginning to brown, about 5 minutes. Add the onion, reduce heat to low and saute till translucent, about 3 minutes. Add the broth and the vinegar, bring to a boil. Pour hot dressing over the potatoes and toss gently. Fold in chives. Season to taste with salt and pepper. Let stand till all broth mixture is absorbed, occasionally tossing gently, about 30 minutes. Sprinkle with extra chives and serve. |

Notes: This is a very different salad for an Italian family, but none the less---delicious. It goes great with an ice cold beer and a BLT on thick slices of---what else????----Italian Bread!!
