4 slices bacon
1 medium white onion, chopped
1 red bell pepper, chopped
1/2 tsp cumin
1/2 tsp chopped parsley
2 15oz cans black beans, undrained
2 tsp chopped chipotle chilies in adobo sauce
1/2 cup sour cream

Directions:
Directions:
Cook the bacon till crisp, and drain all but 1 tbsp of the fat. Place bacnon slices on paper towels to absorb the extra grease. Saute the onion and the red pepper till soft, about 6 minutes. Add the cumin and season for taste with salt and pepper. Add the beans with their liquid and the chipotles. Simmer over medium low heat for 5 minutes till slightly thick, stirring occasionally. Remove from heat. Let stand at room temp for 10 minutes. Transfer 1 cup of the mixture to a food processor or blender. Blend till very smooth. Stir into remaining bean mixture. Add parsley and taste for seasoning. Stir half of the bacon into the mixture. Top with sour cream. Sprinkle with a bit more parsley and the rest of the bacon. Serve warm or at room temp.

This dip is great with any specialty cracker or chip. Try it with veggies, too. You can make this the day before and chill till about an hour before serving time.
