Vegetable Cooking Spray
3/4 lb. Boneless Pork Loin - Cut Into 1/2" Pieces
2 c. Chopped Onion
4 to 5 Large Cloves Garlic - Minced
3 tsp. Chili Powder
(2) 16 oz. Cans Diced Tomatoes In Juice - Undrained
(1) 16 oz. Can Rotella Tomatoes In Juice - Undrained
(2) 16 oz. Cans Red Kidney Beans - Drained
1/2 c. Prepared Chunky Salsa
1/2 c. Chopped Cilantro
1/2 Jar Mild Hot Peppers
3 to 4 Teaspoons Hot Pepper Juice

Coat a large sauce pan or Dutch oven with cooking spray. Add pork; cook over medium heat until no longer pink, stirring frequently. Add onions and garlic; cook one (1) minute. Sprinkle with chili powder; cook one (1) minute, stirring frequently. Add tomatoes and their juice, beans and salsa; bring to a boil.

Reduce heat; cover and simmer 30 minutes, stirring occasionally. Ladle chili into bowls; top each serving with sour cream (optional) and cilantro.
