4 lbs. tomatoes
2 6-oz. jars marinated artichoke hearts
1/2 c. olive oil
2 c. coarsely chopped onion
4 cloves peeled and chopped garlic
1/4 T. dried basil
1/2 T. dried oregano
1/2 c. chopped parsley
1 small dry red pepper, crushed
3 T. whole black peppercorns
1 tsp. salt
1/4 c. grated Romano cheese

Directions:
Directions:
Drain artichokes and reserve marinade. Heat oil in large saucepan and saute onions, garlic, basil, oregano, parsley and red pepper over medium heat for 5 minutes. Crush peppercorns and add. Add tomatoes and salt. Simmer, uncovered over medium heat for 1 hour. Add artichoke marinade and simmer for 30 minutes longer. Stir in artichoke hearts and continue to simmer 20 minutes until rich and thick. Stir in Romano cheese.

Can be served hot or cold. Great for picnics on tortellini! Enough for 4 lbs. of pasta.
