1 c. vegetable oil
2 c. sugar
4 eggs
1 1/2 c. shredded sweet potato
1/4 c. hot water
1 tsp. vanilla
2 1/2 c. self rising flour
1 tsp. ground cinnamon
1 c. sliced almonds
Frosting:
1/2 c. butter
1 c. brown sugar
1 c. evaporated milk
1 1/2 c. coconut
3 egg, yolks beaten
1 1/2 c. coconut
1 c. sliced almonds
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350 . Beat together the oil and sugar. Slowly add sugar to oil mix. Add the eggs one at a time. Beat well. Add sweet potatoes, water, and vanilla. Mix well. In a seperate bowl combine flour and cinnamon. Add flour mixture to potato mixture mixing lightly until incorporated. Stir in almonds. Pour into a greased 9 x 13 inch pan. Bake for 40-45 minutes.

For frosting melt the butter and wisk in sugar. Continue to cook until sugar is melted. Wisk together milk and egg yolks.Add to the sugar mixture and mix well. Bring to boil over medium heat. Allow to boil gently for 2 minutes. Remove from heat and add coconut, almonds, and vanilla. Spread over warm cake. Cool.
