1 lb Sirloin or Top Round Steak
1 lb Mushrooms
1 med Onion
8 c Fresh Spinach
1 clove Garlic
1 can low fat Cream of Mushroom soup*
1 T Olive Oil
2 lg Tomatos

*Optional

Directions:
Directions:
Slice onion into thin 1 inch strips and mash garlic. Using a large deep sided frying pan, saute in olive oil until onions are clear. Salt and pepper to taste. Slice mushrooms and add to pan. Cook until soft. Trim fat off of steak and slice into thin strips. Add to onion/mushroom mixture and cook until just a little pink. Correct seasonings then remove mixture from pan and set aside in a bowl.

Cook spinach in drippings adding a little at a time until
it all fits then cook till just wilted. Stir in meat and onions. Pour can of mushroom soup** over entire mixture, cover and simmer 5 minutes.

Serve over thick sliced tomatoes.

**If omitting soup, after adding meat mixture and toss in pan on medium and toss until heated, serve as usual.

This is extrodinarily easy, tasty and delicious. Gogo says it looks like dog food, but you can't have everything. ;)
