5-6 lb. beef tenderloin

Directions:
Directions:
Place tenderloin in heavy duty pan (I use broiler pan) with skinny end folded under. Pat with white vinegar (to prevent splattering) and sprinkle with salt and pepper.
Preheat oven to 500. Cook for 7 minutes.
Reduce heat to 350 and cook for 25 minutes longer. Cut in middle. If still too purple, cook 5 more minutes.
Remember, the meat continues to cook after it is removed from oven!
