1/4 cup butter
1/4 cup flour
3/4 cup milk
1/4 cup chicken broth
1 egg, beaten
2 tbsp each, chopped celery and scallion
1 tbsp chopped parsley
salt and pepper
1/4 tsp dry mustard
2 cups finely chopped cooked chicken breast
seasoned bread crumbs, about 7 tbsps
1/4 cup grated locatelli cheese
evoo

Directions:

In a medium saucepan melt the butter over medium heat. Stir in the flour and continue cooking stirring constantly for 1 minute. Gradually stir in milk and broth. Cook and stir over medium hea till thick, about 2 minutes. Stir a bit of this mixture into the beaten egg. Return mixture to saucepan and cook and stir 1 minute longer. Stir in the rest of the ingredients, except the evoo.
Cover and chill for at least 2 hours. Shape into patties and fry in evoo (about 1") till browned on both sides. Fry about 3 at a time, and keep warm while the others are cooking. Drain on paper towels. Season with salt and pepper

These are a great alternative to frozen patties---and so much better for you. Serve on nice crusty rolls with big slices ot tomatoes and red onion. How about an order of homemade french fries for a go along!
