1 unbaked 10" pie shell
1 egg white
2 cups canned pumpkin
2 eggs
1 egg yolk (reserved from white)
1 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
3/4 cup heavy cream
1/4 cup whiskey or brandy

Preheat oven to 425
Brush egg white on bottom of unbaked crust. Chill in freezer for 10 minutes. Combine all ingredients and pour into chilled crust. Bake for 10 minutes. Turn oven to 350 and continue baking about 45 - 50 or until inserted knife comes out clean.
