2 cups white rice
1 can kidney beans, drained
8 cloves garlic
2 cans coconut milk
1 1/2 cans chicken broth ( do not use "low-salt")
1/2 cup rice vinegar
1/2 cup brown sugar
3 Tablespoons fish sauce
1 jalapeno, thinly sliced

Directions:
Directions:
Mix altogether in a large (13 x 8) glass baking dish.
Bake at 375' F for one hour (more or less. Until rice is cooked and top is slightly brown).
