1 lb. navy beans
2 smoked ham hocks
1 med. onion, chopped
1 med carrot, shredded
1.t.salt
1/2 t. pepper
1/2 t. ginger
2 T. Brown sugar
3 clovers garlic, smashed and minced
1 T white sugar
water to cover

Directions:
Directions:
Soak beans overnight in cold water. Drain beans and cover with water. Add remaining ingredients and cook over low heat for at least 3 hours( the longer the better) Add water if necessary. Beans will be breaking apart.
