4 baking potatoes
cup low fat cottage cheese
3 Tbsp skim milk
tsp pepper
1 Tbsp freshly chopped chives
Sprinkle paprika as desired

1. Scrub potatoes. Prick skins with a fork. Bake 30-60 min in 350F oven or boil in water until done.
2. Beat cottage cheese until smooth.
3. Slice tops off potatoes and scoop the insides into a bowl with the cottage cheese. Add the milk, pepper, and chives. Spoon mashed potato mixture into potato skins and sprinkle with paprika.
4. Return to 350F oven for 15 min or until lightly browned.
