6 medium sized potatoes
3 stalks broccoli
cup skim milk
1 cup shredded cheddar cheese
1/8 tsp pepper

1. Scrub potatoes. Make shallow slits around the middle as if you were cutting the potatoes in half lengthwise. Bake (30-60 min in 350F oven) or boil in water until done.
2. Peel broccoli stems. Steam whole stalks just until tender and chop finely.
3. Carefully slice the potatoes in half and scoop the insides into a bowl with the broccoli. Add the milk, cup cheese and pepper. Mash together until mixture is pale green with dark green flecks and spoon into potato skins. Sprinkle with remaining cheese.
4. Return to 350F oven for 15 min or until lightly browned.
