Pumpkin Cake:
3 eggs
2/3 c. pumpkin
1 tsp. ginger
1 tsp. baking soda
3/4 c. flour
2 tsp. cinnamon
1/2 tsp. salt
1 c. sugar

Cream Cheese Filling:
8 oz. cream cheese, softened
1 c. powder sugar
1/4 c. butter
1 tsp. vanilla

Beat eggs well, add remaining ingredients and mix well. Grease jelly roll pan, apply waxpaper over the grease and grease waxpaper (cooking spray works great). Pour in cake mixture and bake at 375 for 15 min.

Sprinkle powdered sugar on to a dish towel. Place the baked pumpkin cake onto the dish towel, remove the waxpaper and roll. Place in the refrigerator for 10 min. Unroll and apply cream cheese mixture. Roll cake back up.
