2 lb. lean boneless pork, cut into chunks
3/4 lb. fresh side pork, chunk and remove rind
1 t. salt
1/4 t. red pepper flakes
3/4 t. sage
1/2 t. pepper

Grind all ingredients together,if dry add a little water. Fry a small piece and taste. Adjust seasoning as needed
