3 eggs, beaten till foamy
1 cup vegetable oil
3 tsp. vanilla
2 cups sugar
3 cups flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
1/2 tsp baking powder
2 cups grated zucchini
1 cup chopped walnuts
1/4 cup flour

Directions:

Preheat oven to 350
Mix the eggs, oil and vanilla together. Beat for 1 minute. Add all the rest of the ingredients except the zucchini and nuts and mix well. Stir the zucchini and nuts together with 1/4 cup flour. Add to egg mixture and stir to combine. Pour into 2 greased and floured loaf pans. Bake for 1 hour or until toothpick inserted comes out clean.

This is a moist, not too sweet bread that's great any time of the day. I especially love it with a bit of cream cheese and a steamy cup of my favorite latte for breakfast. What a great way to start the day!
