2 lb. beef roast
1 med. onion, cut into quarters
4 large potatoes, cut into quarters
2 carrots, cut into 2 inch pieces
1 t. salt
1/4 t. pepper
2-3 cloves garlic, minced

Directions:
Directions:
Sprinkle the roast with the salt and pepper. rub the roast with the minced garlic. Place the roast on a rack in your roasting pan and add about 1 inch of water. Spread your vegetables around the roast and cover the pan. Roast in a 225 oven for about 3-4 hours or until really tender. Remove the roast and the vegetables and make great gravy with the drippings.
