1 container (16 ounces) lowfat cottage cheese
cup reduced fat sour cream
2 tbsp chopped parsley
1 envelope good seasons garlic and herb salad dressing mix
2 teaspoons olive oil
6 asparagus spears, cut into 1-inch pieces
pound medium shrimp, cleaned
1 small red pepper, cut into thin strips
8 ounces penne pasta

Directions:

Mix cottage cheese, sour cream, parsley and salad dressing mix in bowl until well blended; set aside
Heat oil in large nonstick skillet. Add asparagus, cook and stir on medium heat 3 minutes. Add shrimp and red pepper, cover. Cook 5 minutes or until shrimp are pink, stirring occasionally.
Meanwhile, cook pasta as directed on package; drain. Place in large serving bowl. Toss with cheese and shrimp mixtures. Serve immediately
