2 c. flour
1/2 c. brown sugar
3 tsp. baking powder
1/2 tsp. salt
1 (15 oz.) can slice peaches
2 eggs
6 Tbsp. butter, melted
3/4 c. chopped pecans (optional)

Directions:
Directions:
Preheat oven to 350.

In a large bowl, combine flour, brown sugar, baking powder, and salt. Drain peaches, reserving 1/4 cup juice. Finely chop 1 cup peaches; set aside. Place remaining peaches and reserved juice in a blender or food processor; add eggs and butter. Cover and process until smooth. Stir into the dry ingredients just until moistened. Fold in the chopped peaches and optional pecans. Pour into two greased 5 3/4 x 3 x 2 inch loaf pans. Bake for 35-40 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from pans to wire rack. Makes 2 loaves.

This can also be made with fresh peaches, substituting the juice with 1/4 cup apple juice.
