2 large tomatoes
1 large cucumber
1 med.green pepper
1 small jar pimento(drained)
2 (12oz.) cans tomato juice
1/3 cup red wine vinegar
1/4 tsp. Tabasco sauce
1 1/2 tsp. salt
1/8 tsp. coarsely ground black pepper
1/2 cup croutons

Directions:

1. In a blender combine 1 tomato, 1/2 cucumber, 1/2 onion, 1/4 green pepper, pimento and 1/2 cup tomato juice. Puree.
2. In a large bow,mix pureed vegetables with the remaining juice, vinegar, Tabasco, salt and pepper.
3.Refrigerate mixture, covered until chilled-at least 2 hours.
4. Chop separately remaining tomato, cucumber, onion and green pepper. Place in separate bowls along with a bowl of croutons. Serve as condiments.
