1 stick butter
1/2 c. sugar
1 c. chopped or pureed mango
1 tsp. baking soda
1/2 c. chopped nuts
1 tsp. vanilla
2 eggs
1 tbsp. lemon or lime juice
2 c. sifted flour
1/4 tsp. salt

Directions:
Directions:
Cream together butter and sugar. Beat in eggs. Stir in mango mixture and add lemon or lime juice. Combine dry ingredients, add to mixture and then stir in nuts. Bake in a greased and floured loaf pan at 375 for 45 minutes or 'til wooden toothpick, inserted in center, comes out clean. Cool on wire rack.
