1 can Le Sueur peas, drained
1 jar chopped pimientos
1 green pepper, diced
3 green onion, chopped
1 can Shoepeg corn, drained (whole Kernel)
1 C. chopped celery
Dressing
1 C. sugar
1/4 C.oil
1/2 vinegar
1 T. water
1 t. salt 1 t. pepper

Directions:
Directions:
Mix all vegetables in a large bowl. Set aside. Bring dressing ingredients to a boil, stirring to dissolve. Cool and pour over veggies.

Recipe can be doubled. It lasts 3-4 weeks refrigerated and gets better with age. Can be used for gifts too. Just put in canning jar with pretty lid.
