6 medium sweet potatoes or 2 (18 oz.) cans
vacuum-packed sweet potatoes
3 Tbsp. margarine
3 Tbsp. brown sugar
1 egg
1 Tbsp. orange zest or grated rind (optional)
1 (15 1/2 oz.) can crushed pineapple in juice, drained

If using regular sweet potatoes-- Wash and pierce fresh potatoes. Place in microwave-proof 3-quart casserole dish with 2 tablespoons water. Cover and microwave on HIGH for 15-17 minutes or until soft, rearranging once. Cool enough to handle. Peel and cut in chunks.

Beat with electric mixer or mash until smooth. Add remaining ingredients; beat or mix until well combined. Spread evenly in 2-quart microwave-proof casserole dish. Microwave uncovered on HIGH for 10 minutes or until heated through, stirring once.
