3 large sweet potatoes or yams, peeled and cut into 1-inch cubes. (about 6 cups)
2 T. olive oil
2 T. brown sugar
1 tsp. chili powder
1/2 tsp salt
1/4 tsp. black pepper

Directions:
Directions:
Place all ingredients in large reseable plastic bag and toss thoroughly to coat and to distrubute spices.
Transfer to a greased 11xz8x2 inch cassserole.
Bake, uncovered, at 400 degrees for 40-45 minutes until potatoes are tender, stirring twice while baking.
