2 egg whites (room temperature)..
1/2 tsp. peppermint extract..
1/2 c. sugar..
6 drops red food coloring (optional)..
1 large pkg. semisweet chocolate morsels

Directions:
Directions:
Combine egg whites and peppermint extract; beat until foamy. Gradually add sugar, 2 tbsp. at a time, beating until stiff peaks form. DO NOT UNDERBEAT. Fold in food coloring, if desired, and chocolate morsels...

Drop, by rounded teaspoonfuls, 2 inchs apart onto greased cookie sheets....

Bake at 200 for 1 hour or until dry and set. (Cookies should not brown)...

Remove to wire rack to cool.
