4 slices of bacon ½ c. bell pepper chopped ½ c. onion chopped 1 ¾ c. water 1 tsp. black pepper 1 lb. raw shrimp, peeled, deveined and cut into pieces 1 c. rice Cajun seasoning (optional)
Brown bacon in large pot. Remove bacon and cut into small pieces. Place bacon pieces back into pot with drippings, add onion and bell pepper. Cook until onions and peppers are tender. Add water, black pepper and seasoning, bring to a boil. Add shrimp and rice, cook covered for 30 minutes, stirring occasionally, or until all liquid is absorbed.
