1 Cauliflower, 3 Tbls. oil, 1/2 lb. mushrooms, 1/4 cup diced green onions, 1/4 cup flour, 1 1/2 cups milk, Salt - Pepper, 3/4 cup cheese (you choose your favorite cheese)

Directions:

Cut up and steam Cauliflower. In a skillet fry onions, mushrooms in oil until onions are tender. Remove onions and mushrooms from oil and set aside. Blend flour into remaining oil, add milk, stirring constantly until smooth & thick. Salt and Pepper to taste. Put Cauliflower and mushroom mixture into casserole dish. Pour milk mixture over the cauilflower, and top with shredded cheese. Bake for 15 to 20 minutes
