1 1/2 lb. of boneless skinless chicken breast halves, 2 cups Marinara Sauce, 1 cup plain dried bread crumbs, 1/2 teas. salt, 1/8 teas. ground black pepper, 1 lrg. egg, 2 Tbls. water, 3 Tabls. butter or margarine, 1/4 cup freshly grated Parmesan cheese, 4 oz. mozzarella cheese, shredded (1 cup)

1. On waxed paper, conbine bread crumbs, salt, and pepper. In a pie plate, beat egg and water. Dip breast half in egg mixture, then in bread crumbs; repeat to coat each breast half twice. 2. In 12 inch skillet, melt butter over medium heat. Add breaded chicken breasts, a few at a time, and cook until browned, about 5 minutes per side, using slotter spatula to transfer chicken to platter as they are browned. 3. Return chicken to skillet. Spoon Marinara sauce evenly over chicken. Sprinkle with Parmesan and top with mozzarella. Reduce heat to low; cover and cook just until cheese has melted, about 5 minutes.
