1 lb veal steak sliced thinly, salt and pepper mixed with 1 cup flour.
3 T. olive oil; 1 T. butter; 1 clove garlic, minced; 1/2 small onion, minced; 2/3 cup chicken broth; 1/3 c dry white wine (sauterine) 2/3 cup tomato juice; 1/4 tsp. dried Rosemary; 1 T. fresh parsley.

Cut veal in small pieces, pound even thiner between two pieces of plastic or heavey freezer paper. Dredge in flour, salt and pepper mixture.
Heat oil and butter, brown all pieces slowly. Remove. Add garlic and onion saute' 10 minutes. Add broth, wine, tomato juice, simmer 10 minutes. Add herbs and return meat to sauce including any juices from meat. Simmer for 1 hour, turning meat to have juices cover. If juice is too reduced, add more broth and or wine. Serve on white rice if desired.
