1/4 lb. diced cooked bacon, crushed
1 cup shredded cooked chicken
1/4 cup chopped onion
1/4 cup chopped green pepper
1 cup raw rice
1 1/2 cup canned tomatoes
1 can of beef or chicken broth or 2 cups meat stock


Directions:
Directions:
Brown bacon till crisp and set aside. Brown the rice in 3 Tbls. of the hot bacpn fat. Add rest of ingredients including bacon. Cover and cook slowly over a low flame until liquid is absorbed (about 25 minutes).
Serve with shredded cheese on top.
