2 tsp. lemon zest 3 tbsp. fresh lemon juice
1 box yellow cake mix 2 egg slightly beaten
1/3 cup canola oil 8 oz. cream cheese
1/3 cup sugar

Directions:
Directions:
In large bowl combine:
1 box yellow cake mix, 1 egg slightly beaten, 1/3 cup canola oil, stirring well until crumbly. Reserve 1 cup of this mixture and press remaining amount into ungreased 9x13x2 baking dish. Bake at 350 for 15 minutes.
In smaller bowl use mixer to beat until fluffy:
8 oz cream cheese
1/3 cup sugar
3 tbsp. fresh lemon juice
2 tsp. zest
1 egg slightly beaten
Spread over the hot cake. Sprinkle with 1 cup reserved cake mixture. Bake for another 15 minutes, cool then refrigerate. Sprinkle with powder sugar to serve.
