3 Beef shanks
2 large cans chopped tomatoes
2 large cans water
2 large potatoes chopped
1 large pkg. frozen mixed vegetables with okra
2 large onions chopped
1/2 small fresh cabbaged chopped
2 tbsp. sugar
salt & pepper

Directions:
Directions:
Cover beef shanks with water and one chopped onion, boil until tender. Remove shanks from broth and cool. Remove bone and break meat into small pieces, add to broth.

Add tomatoes, water, potatoes, onion and salt and pepper. Simmer about one hour. Add frozen vegetable and cabbage. Simmer another hour. You may need to add more water.

Use fresh tomatoes if in season. Always better soup if fresh.

Serve with cornbread.
