1 tbsp. olive oil
1 large onion chopped
2 med. sweet potatoes pealed & diced
2 carrots peeled & diced
2 cloves garlic minced
5 cups chicken broth
1 tbsp. fresh thyme leaves chopped
1 tbsp. fresh rosemary chopped
2 large Granny green apples peeled & cored
1/2 cup heavy cream
Salt & white pepper

Directions:
Directions:
In a large pan heat oil and saute onion 5 minutes or until softened. Add sweet potatoes and carrots. Saute 2 minutes more. Stir in chicken broth and fresh herbs, and apples, bring to a boil. Lower heat and simmer about 20 minutes or until vegetables are all tender.

Puree in food processor in batches. Stir in cream. Season to taste with salt and white pepper
