No stick corn oil cooking spray
3 c oat bran cereal
3 medium size ripe bananas, mashed
3 egg whites
2 T skim milk
2 T corn oil
1 c flour
2 T firmly packed brown sugar
1 T baking powder
1/4 c chopped walnuts

Directions:
Directions:
Spray 12 (2 1/2 inch) or 6 (3 inch) muffin cups with cooking spray. In medium bowl combine cereal, banans, egg whites, milk and oil. Let stand 5 minutes. In large bowl combine flour, sugar and baking powder. Add ceral mixture to flour mixture, stirring just until moistened. Spoon into prepared muffin cups. Sprinkle with nuts. Bake in 400 oven about 20 minutes or until lightly browned and frim to touch. Serve warm with margarine. Mkes 12 standard or 6 large muffins.
