2 small heads of garlic
4 large chicken legs, drumsticks, breasts, thighs separated, skin on or skin removed
1-2 tpsp kosher salt or to taste
Fresh black pepper to taste
1 tbsp chopped parsley
1 tbsp chopped oregano
About 2 1/4 cups fresh breadcrumbs
1 cup all-purpose flour
3 whole eggs
8 tbsp unsalted butter

Preheat over to 350F. Separate garlic cloves, please, and cut lengthwide into slices 1/8-inch thick. Remove any green sprouts inside garlic.

Put chicken on a large platter. Liberally season with salt and peppr. Pierce surface of each chicken piece with the tip of a small pairing knife to make 4 small incisions, big enough to insert the garlic slice. Insert garlic spears inside each piece of chicken until the job is complete. Reserve all leftover garlic pieces.

Combine parsley, oregano and breadcrumbs in a wide bowl. Put flour in a separate wide bowl. in a third bowl, big enough to dip the chicken in, use a fork or whisk to whip the eggs with 2 tablespoons water until well blended.

Melt butter in a large Pyrex casserole dish by placing it in oven for serveral minutes. Meanwhile. dredge each piece of chicken first in flour, then in the egg mixture, and finally in herbed crumbs.

When the butter is melted, remove dish from oven and nestle the coated chicken pieces in the warm butter, arranging pieces to fit tightly. Tuck in any leftover garlic pieces, small or large. Bake chicken for 45 minutes on the middle rack, then carefull turn over each piece. Bake for 35 more minutes, or until the chicken is well browned and crisped on the edges. Remove from oven and let cool slightly.
