1 beaten egg
2 tbsp chopped red bell pepper
1/2 tsp salt
1 c. cubed cooked chicken breast
1/4 c. parmesan
1/2 tsp onion powder
1/2 c. ricotta cheese
1 tsp oregano leaves
french bread
olive oil
2 c. mozzarella cheese

Directions:
Directions:
Brush the top side of 12 slices French bread with extra virgin olive oil. Place on cookie sheet, oiled side up. In a bowl, mix all ingredients, except mozzarella. Spread spoonfuls over top of bread with a spatula, then top with mozzarella cheese. Bake uncovered @ 350 for 15 - 20 minutes. Turn broiler on for last minutes to make them extra crispy - watching carefully no to burn!
