Directions:
Rinse and refrigerate lettuce leaves until ready to serve. In large skillet, add 2 Tbsp olive oil, garlic, onion. Add cubed chicken. When fully cooked, remove from heat, DRAIN, place all in food processor and chop into small bits. Return to skillet, on low-med heat. Add 1 can chopped water chestnuts and 1 tsp chili paste. Cook for 5 minutes, stirring slowly. Serve warm spoonfuls over lettuce leaf, wrap or roll up leaf, eat and ENJOY! A dipping sauce is a nice addition (honey-mustard, etc.)

Personal Notes:
This is my version of the P.F. Chang appetizer. Chili paste is a key ingredient. Usually found in the Asian food area of your grocery store.

You can make a meal of this easily.
