28 c. peeled, sliced, quarted tart apples
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
10 c. water
2 T. lemon juice
3 drops yellow food coloring
3 T. dehydrated lemon peel

Directions:
Directions:
Make a syrup from sugar, cornstarch, cinnamon, nutmeg, salt and water. Cook and stir until thick and bubbly. Add lemon juice to apples and toss. Add the thick spice filling over the apples and toss well. Pack the filling into the jars leaving a good 1/2 inch at the top of the jars. Seal and process jars in water bath for 20 minutes. Makes about 7 quarts of filling.
