8 oz. package black eyed peas
1/2 lb. ham bone
1 small onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 c. instant rice
1 lb. can tomatoes

Directions:
Directions:
Place the peas in a large saucepan and cover with water. Bring to a boil and add ham bone, onion, salt, and pepper. Cook for 1 hour and 15 minutes. Place the rice on top and add enough water to cover the rice. Bring to boiling point and cover then remove from heat. Let stand until rice is tender, then add tomatoes. Serve hot.
